Thick and chewy almond butter cookies filled with hearty oats, sweet dried cherries, and the nutty flavor of spelt flour. Deliciously vegan and refined-sugar free!

Ingredients
  • ¼ cup coconut oil, measured solid then melted
  • ¼ cup natural applesauce
  • ½ cup natural creamy almond butter
  • ¼ cup plus 1 tablespoon maple syrup
  • 3 tablespoons warm water plus 1 tablespoon chia seeds or ground flax
  • 1 teaspoon vanilla extract
  • 1½ cups spelt flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ⅛ teaspoon cinnamon
  • ⅛-1/4 teaspoon salt (depending on if your almond butter is salted)
  • ½ cup old-fashioned oats
  • ⅓ cup dried fruit, chopped nuts, or chocolate chips (I used dried cherries)
Instructions
  1. Preheat the oven to 350.
  2. In a medium-sized bowl, use a fork to combine the flour, baking powder, cinnamon, salt, and oats.
  3. Mix together the melted coconut oil and the applesauce. Beat in the almond butter and maple syrup, then pour in the chia/flax egg and vanilla extract.
  4. Gradually add the flour mixture into the wet ingredients, scraping down the bowl after each addition. Mix until just combined, and then fold in the dried fruit.
  5. Use a heaping tablespoon to scoop the dough, then form into balls. Set onto a baking sheet lined with parchment paper or a silpat, then press down to flatten.
  6. Bake for 8-9 minutes.
