Hi hey! I missed you. Last week, for the first time in a long time, I took a week off of blogging. No posts, no pictures, nada. It wasn’t intentional – the weekend before I tested and photographed recipes, only to decide that nothing was good enough to share. whomp whomp, blog life.
After multiple recipe fails, instead of posting the recipe I have for you today, which I had ready to go, I decided to just, well, not. It was kind of freeing to not worry about stats/social media/followers for a few days, and instead chill my life out a bit.
This week, my mornings have been motivated by toast: thick, seeded bread toasted until golden, and smothered with this nut butter. It’s heaven. Sometimes I sprinkle some chia seeds on top too, but really? That’s just a healthful afterthought.
Today we’re working with some ugly vegetables. Like, the ugliest…but but BUT, those ugly vegetables get all dressed up for some winter vegetable curry and cilantro lime cauliflower rice. It’s vegetables on vegetables on vegetables.
Stuff stuffed with other stuff – that is the way to my man’s heart. Ryan loves food inside of food, and preferably doused with hot sauce. When he requested “a stuffed something” earlier this week, this vegan meal was received with a “these are f*cking GOOD” response from my very carnivorous other half. I call that a big WIN, especially when he doesn’t even bother to coat something in cheese before eating.
