Sweet and Smoky Baked Tofu Tacos with Coconut Citrus Slaw

I’m in a definite tofu phase right now, which is funny because for a long time I wouldn’t touch the stuff. At my college cafeteria, which was great in a lot of ways, there was a salad bar line where they had raw tofu cubes. I tried several times to like that tofu, but the spongey, soft texture and complete lack of any taste whatsoever just didn’t do it for me.

Those experiences in that salad bar line make me totally get how people are put off by tofu. I completely agree that when it’s not prepared right it’s, well, super gross. Ryan makes a face every time I take a block out of the package. I can’t blame him…it’s just so wiggly and white.

It’s become a running joke when I bring desserts over to my parent’s house:

“Katie, now there aren’t any BEANS in these, are there?”

Usually the answer is “No!” laugh laugh “…of course not! Just regular cookies/brownies/cake,” because ever since I brought those fateful red lentil peanut butter cups, which I’ve mentioned a lot lately because they were NOT GOOD, everyone seems to trust me a tad less over there. Because of that, I’ve taken care to not bring my bean-infused baked goods to that house, even if I’m abso-freaking-lutely certain they’re worthy. More for me and less for the haters, you know?

Curried Red Lentil Hummus

Here I am putting lentils where they shouldn’t be yet again. First buffalo sauce and now hummus. Pretty soon I’ll perfect those red lentil peanut butter cups I’ve been thinking about.

Ha! Just kidding. Except not really, because I’ve tried it before…and also I just made a bean dessert last night, which may just show up here soon. Eep. Before we get too off track, let’s hurry up with the curry!…hummus.

This weekend was a whirlwind. A fun whirlwind, but I’d like an extra morning that can be lazy, pajama-filled, and include a blanket and this cup of hot chocolate. Ahh.

I suppose Monday and a snowstorm will do.

5-Ingredient Honey-Sweetened Scotcharoos

This weekend I’ll be celebrating a blogiversary…a blogirthday, if you will. I sat down and decided to finally start a blog (after a couple years of consideration, because that’s how I roll) 3 years ago on Saturday, which makes no sense because it feels like just last week I was sitting at my old white MacBook, wrapped in a blanket because my old apartment was FREEZING, and freaking out over what to write about in my first post. Oh time, where do you go?

To celebrate this toddler of a blog, I made an easy, rich, decadent, 5-ingredient dessert. Two of the ingredients are chocolate and peanut butter, because for me there’s nothing more delicious in the world of sweets than those two flavors together.
